Jerk BBQ Jackfruit Tacos with Mango Salsa
Jamaican jerk spiced jackfruit tacos made by roasting jackfruit in BBQ sauce and served with fresh mango, lime, chilli, red onion and coriander

Ingredients
- 2 Tins of Jackfruit
- 8 Tbsp of Jamaican Jerk Spiced BBQ Sauce
- 1 Tsp of Ground Fennel Seeds
- 2 Tsp of Ground Coriander
- 2 Tsp of Ground Cumin
- 2 Tbsp Maple Syrup
- 1 Mango
- 1 Red Onion
- 1 Bunch of Fresh Coriander
- 1 Red Chilli
- 8 Garlic Cloves
- 1 Lime
- Sea Salt
- 6 Small Soft Tortillas
- Pink Pickled Slaw
- Fresh Rocket
Method
- Heat a fan assisted oven to 200 degrees
- In a large roasting tin, lay out the drained jackfruit and 4 whole peeled garlic cloves, then use a large spoon or your hands to evenly coat with the Jamaican BBQ sauce, ground spices and maple syrup before putting in the oven to roast for 40 minutes until starting to char on the edges
- Meanwhile peel and crush the remaining garlic, chop the chilli, chop the coriander, dice the red onion, before peeling and finely dicing the mango to combine in a bowl with the juice from half a lime and a pinch of sea salt to make the mango salsa
- Warm the tortillas through in a covered dish in the oven for a couple of minutes before serving, then load each tortilla with a large spoonful of charred jack fruit, a dollop of mango salsa, pink pickled slaw, fresh rocket leaves and more Jamaican BBQ sauce
