Greek Vegan Pizza with Cashew Cheese
Greek inspired vegan pizza with olives, peppers and tomato with quick cashew cheese and a rich sun-dried flavour
Ingredients
- 1/2 Red Pepper. Deseeded
- 1/2 Yellow Pepper, Deseeded
- 10 Olives
- 1 Garlic Clove
- 1 Ready to Roll Pizza Dough Ball, Fresh or Defrosted
- 1 Tbsp Tomato Paste
- 100g of Cashews
- Juice of 1/2 Lemon
- 1 Tsp of Olive Oil
- 1.5 Tbsp Nutritional Yeast
- 2 Tsp Dried Oregano
- Pinch of Sea Salt
- Few Twists of Black Pepper
Method
- Turn on the oven and heat to 200 degrees for fan-assisted
- Prepare the red and yellow peppers by cutting into long thin slices of a similar shape and peel the garlic before setting aside
- Flour a surface and roll out your wholewheat pizza dough to pizza size with a rolling pin
- Place the whole cashew nuts into a food processor and pulse until fine (no need to pre-soak like other recipes), then add the nutritional yeast, lemon juice, olive oil, peeled garlic clove, tomato paste, dried oregano, salt and pepper and pulse until a paste
- Spread the rich paste carefully across the pizza dough being careful not to tear the dough, before arranging the peppers across the pizza along with the olives
- Bake in the oven for 7-10 minutes until the edges of the dough are starting to turn golden and serve immediately scattered with fresh basil
