Greek Vegan Pizza with Cashew Cheese

Greek inspired vegan pizza with olives, peppers and tomato with quick cashew cheeseĀ

Ingredients

  • 1/2 Red Pepper. Deseeded
  • 1/2 Yellow Pepper, Deseeded
  • 10 Olives
  • 1 Garlic Clove
  • 1 Ready to Roll Pizza Dough Ball, Fresh or Defrosted
  • 1 Tbsp Tomato Paste
  • 100g of Cashews
  • Juice of 1/2 Lemon
  • 1 Tsp of Olive Oil
  • 1.5 Tbsp Nutritional Yeast
  • 2 Tsp Dried Oregano
  • Pinch of Sea Salt
  • Few Twists of Black Pepper

Method

  1. Turn on the oven and heat to 200 degrees for fan-assisted
  2. Prepare the red and yellow peppers by cutting into long thin slices of a similar shape and peel the garlic before setting aside
  3. Flour a surface and roll out your wholewheat pizza dough to pizza size with a rolling pin
  4. Place the whole cashew nuts into a food processor and pulse until fine (no need to pre-soak like other recipes), then add the nutritional yeast, lemon juice, olive oil, peeled garlic clove, tomato paste, dried oregano, salt and pepper and pulse until a paste
  5. Spread the rich paste carefully across the pizza dough being careful not to tear the dough, before arranging the peppers across the pizza along with the olives
  6. Bake in the oven for 7-10 minutes until the edges of the dough are starting to turn golden and serve immediately scattered with fresh basil
